According to a preview I read on IGN (I linked it below), the games are going to be entirely different. The 360 and PSP versions (the “new generation” games) will have the following new features not available in current gen:
-Incredibly detailed stadiums – EA went around the country and took pictures from the field of 70 stadiums in the game. The backgrounds will be realistic. Student/alumni/home/visitor/band sections appropriately located. Amazing! They’ve even captured sun positions for the stadiums using satellite, so every stadium will have the sun moving in sync with time during the game and at the appropriate arc. Even weather is supposed to be accurate and dynamic.
-Tighter animations even than Madden, thanks to motion capture.
-Snap off screenshots from replay and save them in a photo album
-Refined impact players – they do more of what they’re supposed to this year and are evaluated more frequently during the season.
-Commentary and play by play expanded by about 200%. Now Lee Corso has even more obnoxious things to say!
-A real world ticker that switches between real-world scores and in-game scores (if you’re on live)
-A mini-game mode featuring games like tug of war, bowling, and option dash.
Now, the “current gen” (PS2, XBOX) version will have these features NOT in the 360 version:
-A lot more trick plays, especially on special teams
-Enhanced playbooks (over 100 new formations)
-Campus Legend mode (a much better version of race for the heisman)
-There are in-season drills that actually impact your stats during Campus Legend, like the training camp mini drills from Madden.
-Spring game (chance to evaluate and improve young talent before the season)
Personally, I’m excited for both. I’m planning on picking up the 360 version when it comes out, playing the hell out of it, and having my main dynasty (with about 5 friends) on that. Once I start to tire of it and we see a price drop for the XBOX version, I’ll pick that up for $20 or whatever and play the Campus Legend mode. I wish the 360 version had it all, but it looks so amazing I’ll settle for what it’s got.

The quality of resolution is much better in the xbox 360, but the game play is going to be pretty much the same (now you can see the guy’s fingernails, like that really matters in football).
