Short answer: Yes, you will be able to record your PS3 gameplay through a PC, provided you use the standard RCA composite cables or S-video (the yellow/white/red or the white/red with the S-video).
Long, less misleading answer: It will lag terribly. Even if this device comes packaged with software that lets you easily view the video from your PS3 on your computer monitor, in real time, it will have horrid latency. You will notice this almost immediately, and it will be practically unplayable for any game that you need timing for. USB 2.0 simply cannot handle the information fast enough, if you’d like me to put it that way. You will be able to record, but there’s virtually no way you can see what you’re doing as you try to play. It will be a nightmare.
Easy solution: Get 3 RCA splitters (this is probably the cheapest option; it worked for me) and connect one of each to your TV, then connect one of each to the Sabrent device. You will be able to have full control of the recording process, as half of the split video/sound is plugged into your computer through the Sabrent device, and the other half is working normally on your TV. The only problem with this is if your computer and your TV where you normally play are far apart. You may have to buy extenders.

I can’t find any pictures of this setup, and my setup is slightly different. I can draw you a picture if you need it, or we can talk further and I can assist you however you need.
